In 2017 our team at Edith Cowan University embarked on the construction of the initial Vegetable Nitrate Content Database. This foundational work involved an extensive literature review, by Dr Lauren Blekkenhorst and Dr Catherine Bondonno. From 2021, Dr Liezhou Zhong and Dr Catherine Bondonno started to expand the database to include nitrate and nitrite content data for animal-based foods, and for other plant based food groups. By 2022-23, our team had acquired a substantial volume of data from global authorities. Merging the new data with the existing databases we established using data in literature, we built the Nitrate, Nitrite, and Nitrosamine Database (Nitr-Navigator) (as of 2023v0.07). This represents a pivotal milestone in the field of nitrate and nitrite research. Despite the absence of funding for database development and updates, our commitment has sustained this essential infrastructure. The Nitr-Navigator continues to support multiple projects worldwide, serving as a key infrastructure for resolving the nitrate debate.
